Is the Tongue Map of Taste Zones a Myth?
Most people learn the tongue map in school: sweet at the tip, salty and sour along the sides, bitter at the back, each taste sealed off in its own territory. Most people also, eventually, hear that it's wrong — a popular-science correction that's almost as widely repeated as the original map. We went looking for what the debunking itself is actually based on, and found that the same research used to bust the map also complicates the tidy "taste is uniform everywhere" version of the correction that's replaced it.
The claim
The tongue map — the idea that sweet, sour, salty and bitter are each detected exclusively by a dedicated zone of the tongue (tip, sides, back) — is a myth with no basis in the taste research it's supposedly drawn from.

The map traces back through one specific chain: German researcher D.P. Hänig measured taste thresholds around the edge of the tongue in 1901, publishing the results in Philosophische Studien as "Zur Psychophysik des Geschmackssinnes." Harvard psychologist Edwin G. Boring then redrew Hänig's data in his 1942 textbook, Sensation and Perception in the History of Experimental Psychology — and it's Boring's redrawn version, not anything Hänig himself published, that became the familiar four-zone map printed in textbooks for decades after. The map stood unchallenged as common knowledge until psychologist Virginia Collings re-tested taste thresholds across the tongue and palate in 1974 and found nothing resembling exclusive zones. A 2022 paper in Current Research in Food Science, hosted on PubMed Central, is the fullest modern account of this whole chain that we could read directly — and its own new data is where the story gets a layer more complicated than most retellings.
What's confirmed
- Hänig's original 1901 data doesn't show anything like exclusive taste zones. The 2022 paper, fetched directly via PubMed Central (checked 2026-08-23), states that "Hänig meant to show how sensitivity (the reciprocal of threshold) changed across the various tongue loci," and specifically notes that Hänig found salt sensitivity to be approximately equal across all the locations he tested — the opposite of a dedicated "salty zone."
- Boring's 1942 textbook is where the exaggerated map actually comes from, and the paper names the specific math that produced it. Per the same PMC paper (checked 2026-08-23), Boring "calculated the reciprocals of Hänig's thresholds and then divided them by the maximum reciprocal" — a normalization step that visually exaggerated small, graded differences into what looked like near-total sensory gaps at some loci. The paper quotes taste researcher Linda Bartoshuk's assessment of the result: "Boring's graph led other authors to conclude that there was virtually no sensation ... where the curves showed a minimum sensation." That single redrawn graph, not any new experiment, is the direct ancestor of the "sweet at the tip, bitter at the back" map still printed in textbooks.
- Collings' 1974 re-test found real threshold differences, but nothing consistent with the map. The PMC paper (checked 2026-08-23) describes Collings finding "significant threshold differences as a function of the skin site stimulated," while stating plainly that the differences were modest and inconsistent with the tongue-map myth. We could not independently fetch Collings' original 1974 paper itself — see "What isn't," below — so this description of her findings rests on the 2022 paper's own characterization of it.
- Independent science journalism traces the same origin story and quotes a taste researcher calling Hänig's own graph misleading before Boring ever touched it. Smithsonian Magazine (published 23 May 2017, checked 2026-08-23), fetched directly, independently corroborates the 1901-to-1940s chain and quotes taste researcher Steven Munger describing Hänig's original figure as "more of an artistic interpretation of his measurements than an accurate representation" — meaning the distortion arguably starts one step earlier than the Boring-blames-everything version most retellings settle on.
- Modern research does confirm every basic taste is detectable across the whole tongue, not confined to any zone. Smithsonian's own piece states directly: "all areas of the mouth containing taste buds — including several parts of the tongue, the soft palate ... and the throat — are sensitive to all taste qualities," and that "each receptor type is found across all taste areas in the mouth." The 2022 PMC paper independently reaches the same conclusion from its own new experiment.
What isn't
- The "taste is completely uniform everywhere" version of the correction — the one nearly every debunking page we checked settles on — overstates what the debunking research itself found. The same 2022 PMC paper (checked 2026-08-23) that supplies most of the evidence above states its own new finding in one sentence: "Although all taste sensations were experienced all over the tongue, once again disproving the mythical tongue map, we also observed bitter and umami taste perceptions to be significantly greater on the posterior tongue." That's a real, measured regional difference — smaller and less absolute than the four-zone map, but not nothing. None of the small-site or reference pages we checked for this brief (a university student paper, a neuroscience-outreach explainer, several independent blogs, Wikipedia's own tongue map article) mention this finding alongside the debunk; each states the "myth-busting" half without the "but not perfectly uniform either" half.
- We could not independently fetch Hänig's original 1901 paper. It was published in German in Philosophische Studien and every account we could read, including the 2022 PMC paper and Smithsonian's piece, describes it secondhand. What Hänig himself intended his own graph to communicate is reported here as those sources characterize it, not as something we verified against his original text.
- Collings' 1974 paper, published in Perception & Psychophysics, sits behind a paywall we could not get past. A direct fetch attempt at its Springer host redirected to a login page rather than the article. Her specific threshold figures and methodology are reported here only as the 2022 PMC paper summarizes them, not from our own reading of her results.
- The posterior bitter/umami finding above currently rests on one paper's own new data, not on independent replication we could locate and read. We did not find a second, unrelated modern study confirming the same specific regional effect; it may be well replicated elsewhere in the taste-research literature, but we didn't find and fetch that literature ourselves.
Verdict
The four-zone tongue map is false, and confirmed false twice over: the 1901 data it's supposedly based on never showed anything like exclusive zones, and Boring's 1942 textbook graph that actually produced the popular image did so through a specific, documented normalization trick, not a new experiment. That part is settled. What's less settled than the debunking pages suggest is the replacement claim — that taste is perfectly uniform across the whole tongue. The single most detailed modern source we could read directly found real, modest, posterior-tongue differences for bitter and umami, sitting right next to its own confirmation that the old map is wrong. The tidy "it's a complete myth" verdict is itself a small myth about the myth.
